What Can I Make With 2 Ripe Bananas?

My 2 banana muffin recipe never disappoints. The muffins come out perfectly cooked every single time. They're also really easy to make - get the kids involved and make them in the next school holidays!

2 Banana Muffin Recipe Ingredients

  • 1 ½ cups flour - Use all-purpose flour for this easy and quick banana muffins recipe.
  • 1 teaspoon baking soda / bi-carb soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon - Add 1 teaspoon of ground cinnamon to enhance the flavor and give a nice warmth to the taste of the muffins.
  • 2 large bananas - This recipe calls for 1 cup of mashed banana, about 2 large bananas. To prevent chunky batter, mash the bananas in a bowl before adding the other ingredients.
  • 3 oz | 85g butter - Melt the butter in the microwave, on 30-second bursts, until melted.
  • ⅔ cup brown sugar - I like the molasses richness brown sugar gives to this 2 banana muffin recipe. Light or dark brown sugar works fine.
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract - Vanilla will enhance the taste of the bananas in this recipe.
  • 2 tbs milk - Use regular milk or substitute with other plant-based types of milk.

  1. Preheat the oven to 350°F | 177°C. Either use muffin paper liners or lightly grease a 12-hole muffin pan.
  2. Add the flour, baking soda, baking powder, and cinnamon into a mixing bowl.
  3. In a separate large bowl, add the mashed bananas. On medium speed, with a hand-held or stand mixer, beat in the melted butter, brown sugar, eggs, vanilla, and milk.
  4. Add the dry ingredients to the wet ingredients and fold through with a rubber spatula until just combined.
  5. Spoon the muffin batter evenly among the 12-hole muffin pan.
  6. How long to bake banana muffins? Bake the muffins for 22 to 25 minutes or until a skewer or toothpick inserted into the center of a muffin comes out clean.
  7. Rest for 5 minutes before removing the muffins from the pan. Eat them warm (my favorite!), or let them cool on a wire rack.

I love the softness of the muffins and the sweetness of the banana combined with the crunchiness of the toasted nuts. Note; every commercial brand of almond flour is a bit different - you might need to add less or more than what the recipe states to make your batter the right consistency. You could also add more bananas or eggs to help the binding process if necessary.

Vegan Banana Muffins

Eggs - Either substitute the eggs with more bananas or use a powdered vegan-friendly egg substitute.

Milk - Substitute the dairy milk with plant-based milk.

Butter - Replace the butter with an equal amount of plant-based vegan butter or any vegetable oil you like.

If you want to replace the butter with oil in this 2 banana muffin recipe, I'd say go for it. I've done it myself several times, and the muffins come out tasty. Oil can replace butter in this recipe at a 1:1 ratio.

If you want to keep it super classic, use a neutral-flavor oil like canola oil but if you'd like to try a slightly different flavor profile, try using coconut oil. This will give a hint of coconut flavor, which I think compliments the banana taste nicely.

Banana muffins don't always have to be consumed with guilt. Whenever I want to make them a bit healthier, I swap the all-purpose flour for whole wheat flour at an equal ratio. Sure, whole wheat flour won't rise as well as regular flour, but it still tastes great.

You can also use an equal amount of any healthy oil that you like in place of the butter. Oh, and you can also substitute the sugar with honey. As honey is much sweeter than sugar, use ½ cup only for this banana bread muffin recipe with 2 bananas.

Types of seeds such as pumpkin seeds, grated carrots, and fresh berries are also healthy ingredients to add to the muffin batter to make healthier banana muffins. Sprinkle some extra seeds over these quick banana bread muffins just before baking for extra crunch and decoration.

As I said earlier, my basic banana muffin recipe is so easy and simple that kids (with supervision) can make some themselves.

Also, if you want to make your amazing banana muffins extra fancy for your kids, spread a generous amount of Nutella on top of the cooled muffins, then sprinkle some M&Ms or chocolate sprinkles. These make a great birthday party treat!

Storing - What to do With Leftover Banana Muffins

Room Temperature - Don't leave your banana cake muffins on the counter uncovered for more than 12 hours, as they will dry out. To keep the muffins moist at room temperature, place them in an air-tight container for up to 3 days.

Fridge - Put the banana cinnamon muffins in an air-tight container for up to 1 week in the refrigerator.

Freezer - To extend your banana muffins' shelf life, store them in an air-tight container in the freezer for up to 3 months. To reheat, let them defrost and then pop them in the microwave for 30 seconds - this will make them taste as if they are fresh out of the oven! Yum!

Instructions

  • Preheat oven to 350°F | 177°C.  Line a 12-hole, 80ml (⅓ cup) muffin pan with muffin cup liners; or lightly spray or grease.
  • Into a bowl, add the flour, baking soda, baking powder, and cinnamon and whisk together.
  • In a separate bowl, add the mashed banana, melted butter, brown sugar, eggs, vanilla, and milk. Using a hand-held or electric stand mixer, beat on medium speed for one minute.
  • Add the dry ingredients to the wet ingredients and fold through with a rubber spatula.
  • Spoon the batter among the 12-hole muffin pan.
  • Bake for 22 to 25 minutes or until a skewer poked into the center of a muffin comes out clean. Transfer the muffins to cool slightly on a wire rack. Either serve them warm or at room temperature.
